Meal Prep these Oatmeal Breakfast Cookies
Prep these breakfast cookies to have breakfast ready for the whole week! Begin by preheating your oven to 350 °F and lining a baking sheet with parchment paper. Combine the mashed banana, oat milk, honey, peanut butter, and ground flaxseed in a large bowl. In another bowl, mix together the oats, flour, cinnamon, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a dough is formed. Then, gently fold in the raisins and walnuts. Form the dough into 12 balls and spread them out evenly on the baking sheet. Bake for 10-12 minutes or until the edges are golden in color. Let them cool and enjoy!
You can store these cookies in an airtight container for up to one week (if you can make them last that long… 😏).

- 2/3 cup oatmilk
- 1/2 cup peanut butter
- 2 tablespoons honey
- 2 tablespoons ground flaxseed
- 1/2 cup rolled oats
- 3/4 cup whole wheat flour
- 1 teaspoons cinnamon
- 1/2 teaspoons baking powder
- 1/2 teaspoons salt
- 1/4 cup raisins
- 3 tablespoons walnuts crushed
Preheat oven to 350 °F and line a baking sheet with parchment paper.
